This process can take as little as 90 to 120 min, from beginning to end. Bake times are completely subjective and depends entirely on your preference and how well you want your meat baked. Jerk chicken is traditionally a spicy dish. Although recipes differ, all contain a unique blend of herbs and spices. Using Uncle Goodie’s BBQ Jerk sauce you have more options, based on spice levels. You can make your jerk chicken Mild, that is with lots of flavor and no spice at all. You can make your jerk chicken either mildly spicy – Regular, or Hot which contains a good level of heat and scotch bonnet peppers. Enjoy!
For additional flavor in any recipe simply brush on Uncle Goodie’s BBQ jerk sauce on meat, poultry or fish during the final minutes of grilling or oven baking.
Things needed
- 4-6 lbs Whole Fryer Chicken
- 1 – 2 bottles of Uncle Goodies’ BBQ Jerk Sauce
Cook Time
- Approximately 1 ½ - 2 hrs (total)
- 45 min in oven, breast side down
- 15 min in oven, breast side up
- 10 min in oven, breast side down
PREPARATION PROCESS
- Wash chicken with both lemon juice and vinegar
- Butterfly whole fryer chicken into 2 halves
- Clean and remove additional fat pockets
- Poke holes thru chicken legs, thighs, breasts and wings
Process
- Place butterfly whole chicken in mixing bowl
- Pour Uncle Goodie’s BBQ Jerk Sauce (Hot, Reg, or Mild) over chicken – either 1 or 2 bottles
- Cover mixing bowl, let chicken stand for ½ - 1 hour, or (for best results) let sit in refrigerator overnight in sauce
- Grill or Bake:
- If baking in oven, set temp at 450 degrees
- Place breast on cookie sheet
- Bake breast side down for 45 min on middle rack
- Turn chicken over and continue to bake breast side up for 15 min
- Turn chicken over again
- Turn oven off
- Let chicken sit for an additional 10 min or until your liking
